The fattest general-purpose '51 derivative* IMHO are the uPSD3x5x's: 32kB RAM + 160kB or 288kB FLASH. Intricate paging/mapping schemes available, thanks to the built-in decoding PLD (roughly of 2 GALs). Bells and whistles included.
