I assume you meant replace 8748 with 8751. Richard mentioned disassembling the code. D52 (click on the disassembler link at the left) also contains d48, an MCS48 disassembler.

Note that 8748 and 8751 chips are not pin compatible, so you'll need to make an adapter board if you intend to make a drop-in replacement for the 8748 on an existing board.
