A disassembler will convert for you.

The Intel data sheet shows the break down for the Opcodes.
Some just are. Others are partually bit coded.
Page 65 of the Keil Macro Assembler Manual has a 16 by 16 matrix of the Opcodes by nibbles. Some of the patterns can be seen there.
