I've seen it hang. We had a big system with slave devices that were not only bit-bang I2C slaves, but hot-pluggable. And this was before the I2C hot-plug chips you can buy now. Also we stumbled upon some I2C LCD devices

I have used serial Flash, Derial FRAM, I/O expanders, RTC and never seen a hang.
