The idea of using a crowbar SCR is, that it works like a latch, means stays activated even when the overvoltage is removed again. When intending to disconnect the circuit from overvoltage by the help of MOSFET, then you will need an additional latch to store the fault status, otherwise the MOSFET will oscillate and switch-on and -off all the time.

Crowbars are difficult to design, because when using the crowbar SCR in combination with a fuse, then you have to take into calculation the trip time of fuse. I have seen applications, where the supply was too weak to make the fuse to trip. You could see the fuse acting like a lamp, not tripping even after hours...
