if you are new to embedded field then the foolowing are some of the projects(small):
1. PLC Imkplementation.
2. Digital Organizer wtih RTC.
3. PC based Data Acquisition System.
4. Electronic Voting Machine and many more.

but if you have good experience in these projects then try to develop a Attendence based Smart Card Reader(Non Readymade).
