He talked about sealed potentiometer - so not affected by water because no water inside it.

If you go wireless - like tab or phone - you could use wifi communication and just design/sell the receiving end + the software. And a tab/phone normally have vol+/vol- buttons that can be used instead of a potentiometer if needing some tactile control.
