Don't forget that EEPROMs have a write time of a few miilisecs, and the wear and tear of writing too often.
for scrolling displays, the write time of the meory is almost irrelevant. You only write when the message changes and when a change of the message occur, a brief blackout is not noticed. If, hoeever you have anything erratic in processing a mesage that immediately get noticed.
