In that case, wouldn't it make sense to use one of the established stage (music) interfaces?

MIDI and DMX spring to mind...

IIRC, MIDI is single-ended and pretty much like the simple pullup arrangement of I2C (although opto-isolated)

AIUI, DMX is differential?
