The real issue with sensing heat through plastic (imperfect insulators) is probably not the ability to sense it, but the thermal lag resulting from the setup.
As an example: if you make the plastic tube run through a chamber where the sensor sits you will eventually get the correct reading, but how long it takes to get there is another story. So one VERY important issue is: how fast must you react?.
